A classic, high-cuisine interpretation of agnello ai funghi: lamb seared in butter and aromatics, finished in the oven, then served with forest mushrooms and a glossy, reduced Madeira sauce. Elegant, traditional, and built on clean technique.

Put a large sauté pan, a small saucepan (for sauce), and a pot (for potatoes) on the counter.
Do now:
Pat lamb completely dry (paper towels). Moisture prevents browning.
Slice shallots; crush garlic; pick thyme leaves; keep rosemary whole.
Clean mushrooms: brush off dirt; wipe with a barely damp towel. Avoid soaking (they drink water).
Preheat oven to 190°C / 375°F.
Warm plates (optional but very “fine dining”: low oven heat or warm water then dry).
If using a rack, cut into 4 even chops; if loin, portion into 4 medallions/steaks. Lightly trim excess surface fat (leave a thin layer for flavor).
Season all sides with salt and pepper. Lightly brush with Dijon (thin film only) to help seasoning cling and add subtle depth.
Heat your sauté pan over medium-high until hot. Add olive oil, then add lamb presentation-side down first. Do not move it for 2–3 minutes.
Turn and sear remaining sides. Add 20 g / 0.7 oz butter, thyme, and rosemary. Tilt pan and spoon the foaming butter over lamb for 30–45 seconds.
Transfer lamb to a tray (or keep in oven-safe pan). Roast 6–12 minutes depending on thickness and desired doneness.
Target internal temperatures:
54–57°C / 129–135°F (medium-rare, recommended)
60°C / 140°F (medium)
Remove from oven and place on a warm plate or rack.
Rest the lamb properly (do not skip)
Rest 8–10 minutes, loosely tented with foil.
Pour any resting juices into a small bowl—these are gold for the sauce later.
Peel potatoes, cut evenly. Start in cold salted water, bring to a gentle boil until very tender (knife slides through easily).
Warm milk + cream in a small pot (do not boil hard). Drain potatoes well, return to hot pot 30 seconds to steam off excess water.
Mash, then pass through a ricer/sieve if you want restaurant smoothness. Stir in warm dairy, then 40 g / 1.4 oz butter. Season with salt and a pinch of nutmeg.
Using the same sauté pan (wipe out burnt bits only), heat to medium-high. Add a touch of oil, then mushrooms in a single layer. Leave them undisturbed for 1–2 minutes to caramelize.
Add shallots, then garlic. Season lightly. Add 30 g / 1.1 oz butter and thyme; toss until glossy and browned.
Push mushrooms to one side (or remove temporarily). Deglaze the pan with Madeira, scraping browned bits. Reduce by about half (it should smell less “alcoholic” and more sweet/nutty).
Add stock and optional demi-glace. Simmer until it coats the back of a spoon (light nappé). Add resting juices.
Turn heat off, then whisk in remaining 20 g / 0.7 oz cold butter for shine. Adjust salt/pepper.
Spoon purée (if using) as a smooth oval. Arrange lamb neatly (slice if loin medallions; keep chops whole if rack).
Place mushrooms alongside or partially over lamb. Nap sauce around—not drowning.
Finish with a few thyme leaves or micro herbs, and a final crack of pepper. Serve immediately on warm plates.
