Fluffy, tender pancakes baked in the air fryer—no flipping, no splatter. Think of them as airy little pancake rounds with jewel-bright berries, finished like a plated dessert: warm, glossy, and quietly luxurious.

Place your air fryer on a stable surface with room for airflow. Gather a digital scale, whisk, bowl, silicone pancake molds or ramekins (about 10 cm / 4 in wide), and a small brush or paper towel for greasing. Weigh every ingredient. Melt the butter and let it cool slightly (warm, not hot). Lightly beat the egg in a cup so it blends evenly.
Preheat the air fryer to 160°C / 320°F for 3 minutes. Meanwhile, lightly grease the molds/ramekins (thin film—no pooling). If using berries with lots of juice (very ripe or frozen), toss them briefly in a pinch of flour from the measured amount to reduce sinking and streaking.
In a bowl, whisk together flour, sugar, baking powder, and salt for 20 seconds. This isn’t busywork: it distributes the leavening so every pancake rises the same, without “salty” or “soapy” bites.
In a second bowl, whisk milk, beaten egg, melted butter, and vanilla until glossy and unified. Pour wet into dry. Whisk just until you no longer see dry flour—small lumps are desirable. Critical point: overmixing develops gluten and turns pancakes tight instead of cloud-soft.
Rest the batter 3 minutes (it thickens slightly). Spoon into molds to ½–⅔ full—this prevents overflow and keeps the center airy. Press a few berries into the top of each portion, leaving some visible for a jeweled finish.
Place molds in the basket with a little space between them. Air fry at 160°C / 320°F for 8–10 minutes, until the tops look set and matte. For deeper color, increase to 175°C / 350°F for 1–2 minutes.
Doneness cue: a toothpick should come out clean or with a few moist crumbs (not wet batter).
Rest 2 minutes (steam finishes the interior). Turn out gently. Plate warm, add berries, and finish with a thin ribbon of maple syrup or a spoon of yogurt. Serve immediately for the softest texture.
