Alici alla Griglia (Modern Grilled Anchovies)

A deceptively simple, intensely Mediterranean dish: fresh anchovies butterflied, kissed by high heat, and finished with a bright herb–lemon emulsion. The goal is crisp edges, tender flesh, and clean sea-sweet flavor—no sticking, no overcooking, no bitterness.

Method

    Set your station (2 minutes)

    Place a tray lined with paper towels near your sink. Set out: a small bowl, microplane/grater, zester, tongs, and a clean plate for finished fish.

    Clean and butterfly the anchovies (10–12 minutes)

    Rinse the anchovies quickly under cold water, then work one fish at a time:

    Hold the head, gently pull and twist; the guts will often come with it.

    Run your thumb along the belly to open it.

    Lift the backbone from the head end and pull toward the tail; remove if it comes away cleanly (leave tail on for handling).

    Pat dry thoroughly on paper towels.

    Dry fish = no sticking + better browning.

    Be gentle: torn flesh sticks more and cooks unevenly.

    Make the finishing emulsion (3 minutes)

    In a bowl, whisk olive oil, lemon juice, zest, parsley, garlic, pepper, and (if using) chili flakes. Taste: it should be vivid and aromatic.

    Preheat the grill properly (5–8 minutes)

    Heat to high (aiming for a very hot grate). Clean the grate, then oil it lightly (paper towel dipped in oil, held with tongs).

    If using a grill tray / fish basket, preheat that too.

    Season and (optionally) coat (1 minute)

    Right before cooking, lightly salt the anchovies.

    Optional crunch: dust the flesh side with breadcrumbs (a whisper-thin layer), then drizzle a little oil.

    Grill (the decisive 60–120 seconds) (2–4 minutes total)

    Place anchovies skin-side down first on the hottest zone (or on a preheated tray).

    Grill 45–75 seconds, until edges begin to crisp and the fish releases easily.

    Flip carefully and grill 20–40 seconds more.

    Transfer immediately to a clean plate.

    If it resists, don’t force it—give it 10–15 seconds more; it will release when ready.

    Anchovies go from perfect to dry fast—pull them as soon as they’re opaque and glossy.

    Finish like a chef (1 minute)

    Spoon the herb–lemon emulsion over the hot anchovies so it “blooms” from the residual heat. Add a final pinch of salt only if needed.

    Serve at once.
