A refined, contemporary take on a coastal classic: desalted baccalà grilled over steady heat until it takes on delicate grill marks, then finished with a bright lemon–herb emulsion that clings like a light glaze—fresh, precise, and deeply satisfying.

Set out: a tray with paper towels, a small bowl + whisk, a pastry brush/spoon, tongs, and a fish basket or two wide spatulas. If using charcoal, light it now; you want steady medium-high heat, not flames. Slice lemons in half; keep a clean plate ready for the cooked fish (never reuse the raw tray).
Rinse quickly under cold water. Submerge in plenty of cold water in the fridge for 12–36 hours, changing water every 6–8 hours. Taste a thin shaving from the thickest part: it should be pleasantly seasoned, not aggressively salty. Drain well. (If you purchased “already desalted,” still rinse and pat dry.)
Pat the fillets extremely dry—top, bottom, and edges. Let them sit 10 minutes at cool room temperature while you prep the emulsion. This short tempering reduces sticking and helps the surface sear instead of weeping moisture.
In a bowl, whisk 60 g / 2.1 oz olive oil with lemon juice, zest, garlic, parsley, oregano/thyme, chili, and black pepper. Aim for a loose, glossy sauce. Do not add salt (the fish carries enough). Reserve ⅓ of the emulsion for plating (keep it clean—no raw fish contact).
Preheat grill to medium-high. Clean the grates thoroughly, then oil them lightly (folded paper towel dipped in oil, held with tongs). You want the grill hot enough to sear, but not so hot the skin scorches before the fish releases.
Brush the fish lightly with emulsion (not dripping). Place skin-side down first. Do not move it for 3–5 minutes—let the proteins set and release naturally. When edges turn opaque about ⅓ up the side and the fish lifts cleanly, flip once. Grill 2–4 minutes more, depending on thickness, until it flakes with gentle pressure and is juicy, not dry. If using lemons, char cut-side down for 2–3 minutes.
In the last 30–45 seconds, spoon a small amount of emulsion over the flesh side—just enough to perfume and gloss. Remove immediately. Overcooking is the enemy: baccalà should be silky and pearly, not chalky.
Rest the fish 2 minutes (carryover finishes the center). Plate, then spoon the reserved clean emulsion over the top. Add charred lemon, a few warmed tomatoes or capers if using, and a final crack of black pepper.
