Method

  1. 1

Mise en place (set yourself up like a pro)

Preheat the oven to 220°C / 425°F. Line a tray with parchment (or lightly oil it). Set out: a small saucepan, a mixing bowl, a whisk, a microplane/grater, and a spoon for basting.

Pat salmon very dry with paper towels—this is a critical point: dry surface = better lacquer. Keep the salmon chilled while you prep, so it bakes evenly and stays juicy.

  2. 2

Quick-pickle the cucumber (brightness on standby)

In a bowl, whisk vinegar + sugar + fine salt until dissolved. Add cucumber slices and toss. Leave at room temp 10–15 minutes, tossing once. This runs in parallel while you cook—classic kitchen efficiency.

  3. 3

Build the chili lacquer (balanced heat, not aggression)

In a bowl, whisk Calabrian chili paste, honey, soy, vinegar, lime zest, lime juice, garlic, ginger, and sesame oil until smooth. Taste: it should be sweet-salty-spicy with a clear citrus lift. If it feels “sharp,” add a touch more honey; if too sweet, a few drops vinegar.

  4. 4

Season, lacquer, and stage the tray

Place salmon skin-side down on the tray. Spoon a thin layer of lacquer over each fillet (save about ⅓ for later basting). Let the salmon sit 5 minutes—not long, just enough to cling.

  5. 5

Bake + glaze in layers (control the finish)

Bake 7–9 minutes, then brush on another thin layer of lacquer. Return to oven 2–3 minutes.

For a deeper gloss, finish 1 minute under the broiler/grill (watch constantly). Target internal temp: 49–52°C / 120–126°F (juicy, restaurant-style). Rest salmon 2 minutes before saucing.

  6. 6

Lime beurre monté (silky, not greasy)

In a small saucepan, heat water to a gentle simmer (not a hard boil). Reduce heat low and whisk in cold butter cubes one at a time, keeping it glossy and emulsified. Off heat, whisk in lime juice.

  7. 7

    Plate with haute cuisine restraint

Swipe a spoon of lime beurre monté on each plate. Set salmon on top. Add a small, neat mound of drained cucumber pickles to the side. Finish with scallion, herbs, sesame, and a pinch of flaky salt. Serve immediately.

Notes: Calabrian chili paste is fragrant and rounded; if using a hotter paste, start with 15 g / 0.5 oz and adjust.
