Branzino al Forno — Amalfi-Style Roast Sea Bass with Fennel, Citrus & Sauce Vierge

Method

   Mise en place (set yourself up like a pro)

   Preheat the oven to 220°C / 425°F (fan on if you have it). Set a rack in the upper-middle position. Line a roasting tray lightly with oil. Slice fennel thin; slice lemons; crush garlic. Chop parsley, tear basil, quarter tomatoes. Rinse capers and dry them well (wet capers dilute the sauce). Keep herbs and tomatoes at room temperature—sauce vierge should never be cold.

   Prepare the fish (dryness = crispness)

   Pat the branzino very dry inside and out with paper towels. Score each side 3 shallow slashes (just through the skin) to prevent curling and to help heat penetrate evenly. Season the cavity with a pinch of salt and a little lemon zest. Insert 2–3 lemon slices + a few fennel fronds (or fennel slices) + a piece of crushed garlic into each fish.

   Build the roasting “bed” (gentle perfume, no sogginess)

   Spread sliced fennel on the tray, drizzle with a little olive oil, and season lightly. Nestle the fish on top so hot air can circulate. Pour the wine into the tray (aim around the fennel, not over the fish). This steams the aromatics while the fish roasts dry on top—best of both worlds.

   Roast (critical point: don’t chase “well done”)

   Brush fish skin with olive oil; season the outside with remaining salt and a little pepper. Roast 12–16 minutes depending on size. The goal is just-set flesh: thickest part should read 52–55°C / 125–131°F. No thermometer? Look for opaque flesh that still glistens and begins to pull from the bone with gentle pressure.

   Rest + make the sauce vierge (warm fish, fresh sauce)

   Rest fish 3 minutes (carryover heat finishes the center). Meanwhile, in a bowl combine tomatoes, capers, parsley, basil, lemon zest, and 40 g / 1.4 oz olive oil. Add a squeeze of lemon juice to taste and a small pinch of salt. If you want a restaurant sheen, whisk in 20 g / 0.7 oz softened butter at the end (off heat).

   Fillet cleanly (keep it elegant, keep it intact)

   Lift off the top fillet with a fish spatula or spoon, following the backbone. Remove the central bone in one piece if possible, then lift the second fillet. Plate with the skin side up if crisp; otherwise skin side down for a cleaner look. Spoon roasting juices from the tray around the plate (not over the sauce).

   Plate like haute cuisine (contrast + height + precision)

   Place a small nest of roasted fennel as a base, lay branzino on top, then spoon sauce vierge beside and lightly over the fish (leave some skin visible). Finish with a final thread of olive oil and a whisper of lemon zest. Serve immediately—timing is part of the luxury.
