Broccoli al Forno (Paris-Bistro Roast)

A haute take on a humble vegetable: broccoli florets blanched for tenderness, roasted at high heat for charred edges, then lacquered with nutty beurre noisette, lemon, and Parmigiano—finished like a composed garnish, not a side dish.

    Set the oven to 230°C / 450°F (fan if available). Place a large sheet pan inside while it heats—starting on a hot pan helps the broccoli sear instead of steam.

    Prepare: a large pot of salted boiling water, a bowl of cold water (ice helps), a clean towel, and a mixing bowl.

    Trim + blanch for a refined bite

    Cut broccoli into even florets (about walnut-sized). Peel tough stem skin; slice tender stems into bite-size pieces.

    Blanch in boiling salted water 2 minutes (you want bright green and barely tender). Drain immediately and chill in cold water 30–60 seconds to stop cooking. Drain again.

    Dry completely + season with intention

    Spread broccoli on a towel and pat very dry (this is non-negotiable for crisp edges).

    In a bowl, toss broccoli with olive oil, garlic, half the salt, pepper, and optional chili flakes.

    Roast: space, heat, and one decisive turn

    Carefully remove the hot pan. Arrange broccoli in one uncrowded layer. Roast 10 minutes, then turn pieces with tongs and roast 6–8 minutes more.

    Look for: browned edges, deep green tops, tender stems.

    Build the haute finish: beurre noisette + citrus lift

    While broccoli roasts, melt butter in a small pan over medium heat. Swirl until it smells nutty and turns golden-brown (watch closely—brown happens fast).

    Off heat, add lemon juice (it will sizzle), then stir in lemon zest and a pinch of salt. This becomes your glossy finishing sauce.

    Glaze + coat + plate like a composed garnish

    Transfer hot broccoli to a bowl. Drizzle with the brown-butter lemon finish and toss. Add Parmigiano and breadcrumbs; toss again so the cheese melts and the crumbs cling.

    Plate on a warm dish, mound neatly, and finish with toasted almonds and an extra whisper of pepper.
