Broccoli “Teriyaki Laqué” (Paris x Tokyo Bistro Style)

    Mise en place — precision before heat

    Set two stations: (A) blanching and (B) sauté/glaze.

    Trim broccoli into uniform florets (consistent thickness = even doneness). Peel the tough broccoli stem and slice it into thin batons if using—chefs’ treat, zero waste.

    In a small saucepan, pre-measure all lacquer ingredients except sesame oil (it goes in at the end for aroma). Keep your garnishes ready (sesame, scallion, optional zest).

    Blanch + shock — lock in color and tenderness

    Bring a pot of water to a confident boil; salt it with 10 g / 0.35 oz fine salt. Prepare a bowl of ice water.

    Blanch broccoli 90 seconds (you want bright green and just beginning to soften). Immediately transfer to ice water to halt cooking, then drain well. Pat dry.

    Reduce the lacquer — “nappe” consistency

    Bring the saucepan with soy, mirin, sake, sugar, ginger, garlic, and vinegar to a lively simmer. Reduce 3–5 minutes, stirring, until glossy and slightly thick—when you drag a spoon through, it should briefly hold a line (light “nappe”).

    Remove from heat and stir in toasted sesame oil.

    Char the broccoli — controlled heat for elegance

    Heat a wide sauté pan until hot, add neutral oil, then add broccoli in a single layer. Let it sear undisturbed 60–90 seconds, then toss and repeat until you see caramelized edges.

    Lower heat to medium. Add a small splash of lacquer and toss to coat; add more in increments until lacquered, not swimming.

    Plate like a small Parisian tasting course

    On warm plates, arrange florets with height (a loose mound, not a pile). Spoon any remaining lacquer around—not over—to keep the glaze mirror-like.

    Finish with toasted sesame, scallion, and optional yuzu zest. Serve immediately while the edges are still crisp and the lacquer is glossy.
