Busiate alla Carrettiera (Garlic, Chili, Pecorino & Extra-Virgin Olive Oil) — Haute Sicilian Minimalism

A Trapani-style pasta where one impeccable emulsion turns garlic-infused olive oil, chili heat, and Pecorino into a glossy, clinging sauce. The goal is not “oil on pasta,” but a silky coating that hugs each twist of busiate.

    Mise en place (set yourself up like a line cook)

    Set a large pot for pasta water, a wide sauté pan, tongs, a microplane or fine grater, and a warm serving bowl.

    Slice garlic evenly thin (so it perfumes oil without scorching). Grate Pecorino very fine (fine texture melts; coarse texture clumps). Chop parsley if using.

    Season and start the pasta water

    Fill the pot generously and bring to a rolling boil. Salt the water until it tastes pleasantly of the sea. Add busiate and stir for the first 30 seconds so it doesn’t stick.

    Build the aromatic oil (low and slow infusion)

    While pasta cooks, place the sauté pan over low heat. Add olive oil, then garlic. Let it gently sizzle—no browning—for 2–3 minutes until fragrant and pale gold. Add chili flakes for the last 30 seconds to bloom their aroma.

    Reserve pasta water like it’s an ingredient (because it is)

    At 2 minutes before al dente, scoop and reserve 180–240 g / 6.3–8.5 oz pasta water. You’ll use it in stages.

    Transfer pasta to pan and start the emulsion

    Move pasta directly from pot to pan (tongs or spider), bringing a little water with it. Turn heat to medium-low. Add 90 g / 3.2 oz reserved water to start, then toss vigorously for 30–45 seconds. The oil should begin turning lightly opaque and glossy.

    Off-heat cheese finish (the key haute-cuisine move)

    Turn the heat off. Add Pecorino in 2–3 additions, tossing constantly. Add small splashes of pasta water only as needed to keep it creamy and fluid (not soupy). Finish with parsley if using.

    Plate with intent (texture, shine, aroma)

    Warm bowls, then twist pasta into a neat mound. Spoon any glossy emulsion over the top. Finish with a final “snow” of Pecorino and a restrained pinch of chili. Serve immediately—this sauce is best in the first minutes.
