Calamarata with Seafood Sugo (Fine-Dining Coastal Style)

Method

   Shellfish purge (critical for a clean sauce)

   If your clams are live: soak them in cold water with 10 g / 0.35 oz salt for 30–60 min, then rinse. Scrub mussels and pull the “beard.”

   Mise en place (set yourself up like a pro kitchen)

   Dice shallot, slice garlic, chop parsley, tear basil, zest lemon.

   Portion seafood: keep squid and shrimp separate (they cook at different speeds).

   Place a fine strainer over a bowl (for shellfish liquor).

   Set a large sauté pan + lid, and a large pasta pot.

   Open shellfish + reserve the “sea broth”

   Heat 15 g / 0.5 oz olive oil in the sauté pan on medium-high. Add clams + mussels, pour in 80 g / 2.8 oz wine, cover. Steam 3–6 min, shaking the pan once, until opened.

   Strain the cooking liquid into the bowl (this is flavor gold). Remove meat from about half the shells for elegance; keep some in-shell for height. Discard any shellfish that stayed closed.

   Build the aromatic base (soffritto, no browning)

   Wipe the pan, lower to medium. Add remaining olive oil, then shallot + garlic + chili. Sweat 3–4 min until soft and sweet—not colored. Stir in tomato paste and cook 1 min to remove raw taste.

   Create the sugo (reduce for intensity, not heaviness)

   Add crushed tomatoes. Simmer 6–8 min to tighten. Add reserved shellfish liquor (start with 150 g / 5.3 oz) + fish stock to reach a silky sauce consistency. Simmer 8–10 min.

   Cook squid gently (tender, never rubbery)

   Slice squid tubes into “calamari rings” to echo the pasta shape; keep tentacles whole. Add squid to the simmering sugo and cook 2–3 min only. Turn off heat.

   Cook pasta (timing is everything)

   Bring pasta water to a rolling boil, salt it. Cook calamarata 2 minutes less than package says. Reserve 250 g / 8.8 oz pasta water.

   Emulsify + finish seafood (restaurant-style gloss)

   Bring the sugo back to medium heat. Add drained pasta and toss vigorously 1–2 min, adding reserved pasta water a splash at a time until the sauce clings and shines. Add shrimp for 60–90 sec until just opaque. Fold in shellfish meat, parsley, basil, lemon zest. Optional: swirl in butter off-heat for a polished finish.

   Plate like fine dining (height, negative space, shine)

   Twirl pasta into warm bowls with tongs. Spoon extra seafood and a little sauce on top. Finish with a micro-grate of bottarga (optional), a thread of olive oil or lemon oil, and a few herbs. Serve immediately—this dish is at its peak in the first minutes.
