    Mise en place (set the “fine dining” baseline)

    Chill 2 serving plates (5–10 min). Set: sharp knife, cutting board, paper towels, small bowl, blender (or mortar), fine sieve. Put mozzarella in a strainer and let it drain while you work (critical: excess whey = watery plate). Prepare an ice bowl with cold water.

    Basil oil (the signature green, not black)

    Bring a small pot of water to a boil, salt lightly. Blanch basil 10 seconds (bright green), then shock in ice water. Squeeze very dry in paper towel (critical: water makes the oil cloudy). Blend basil with 20 g / 0.7 oz of the olive oil until vivid; strain through a fine sieve. Hold at room temp.

    Tomato concassé (clean edges, controlled juice)

    Cut tomatoes into neat wedges; remove watery seed pockets (save the clean flesh). Dice or slice into “petals” with uniform thickness. Season in a bowl with 2 g / 0.07 oz fine salt, a pinch of pepper, and 5 g / 0.18 oz olive oil. Rest 3–5 min, then spoon off the released tomato juice (save it for plating).

    Mozzarella shaping (temperature + texture control)

    Pat mozzarella gently with paper towel. Slice into clean rounds or tear into two-bite pieces with smooth edges (avoid shredding). Season lightly with a pinch of salt and a few drops of olive oil (critical: don’t over-salt—mozzarella is delicate).

    Plating architecture (negative space matters)

    On each cold plate, brush a curved “swipe” of basil oil (fine-dining gesture). Arrange tomato petals in a loose ring, leaving a clean center. Nestle mozzarella between tomatoes, alternating colors for contrast. Spoon a teaspoon of reserved tomato juice around (not over) the mozzarella to keep it pristine.

    Final seasoning & shine (last 30 seconds)

    Drizzle remaining olive oil in a thin thread. Add 1–3 small dots of aged balsamic (optional, keep it minimal). Finish with flaky salt, a final crack of pepper, and tiny basil leaves. If using lemon zest, add one light pass only (critical: too much lemon breaks the classic balance).

    Service (Caprese is about immediacy)

    Serve immediately: tomatoes should be room temp and aromatic; mozzarella cool but not icy. Wipe plate edges for a restaurant finish.
