Cavolo Nero in Padella

    Mise en place and station setup

    Fill a large bowl with ice water. Bring a pot of well-salted water to a boil. Wash the cavolo nero leaf by leaf, then dry it carefully. Strip away the central ribs if thick; keep the more tender upper stems. Stack the leaves, roll them tightly, and slice into elegant ribbons about 2 cm / ¾ in wide. Slice the garlic thinly, zest and juice the lemon, measure the wine, and keep salt, pepper, and chili within reach.

    Blanch for color and tenderness

    Drop the kale into the boiling water for 45 to 60 seconds only, just until the leaves relax and turn a vivid deep green. Transfer immediately to the ice bath to stop the cooking, then drain thoroughly. Squeeze very gently and spread on a cloth or tray so excess moisture evaporates.

    Build the aromatic oil

    Set a wide sauté pan over low heat. Add the olive oil, sliced garlic, and chili flakes. Let the garlic infuse slowly for about 1 minute, stirring gently, until fragrant but still pale blond.

    Glaze the kale in the pan

    Raise the heat to medium. Add the blanched kale in two additions, turning each batch with tongs so every ribbon is coated in the perfumed oil before adding the next. Season lightly with the salt and a few turns of black pepper. Toss continuously for 1 to 2 minutes. The leaves should become glossy, supple, and lightly concentrated, not dry.

    Deglaze and finish the structure

    Pour in the white wine around the edge of the pan. Let it reduce for 20 to 30 seconds, then cover for 2 minutes so the lower stems finish softening. Uncover and cook a final 30 to 60 seconds until the liquid has nearly vanished and only a thin glaze remains around the leaves.

    Final seasoning and plating

    Off the heat, fold in the lemon zest and lemon juice. Taste and correct the seasoning with a final pinch of salt if needed. Twist the kale into a compact mound with tongs and place it on a warm plate or shallow dish. Finish with a light veil of pangrattato for texture, and a restrained touch of Pecorino if desired. Serve immediately.
