    Make a soft dough base

    In a large bowl, mix flour, sugar, baking powder, salt, lemon zest, and vanilla. Add the soft butter and rub it in with fingertips until the mixture looks sandy (this helps crispness). Add eggs and grappa/rum. Stir with a fork first, then use your hands until a rough dough forms.

    Knead correctly (this matters for bubbles)

    Move dough to a lightly floured surface. Knead 8–10 minutes: push with the heel of your hand, fold, rotate, repeat. The dough should become smooth and elastic (like pasta dough). If sticky, add a tiny dusting of flour; if too dry, wet your hands and keep kneading—avoid adding lots of flour.

    Rest the dough (don’t skip)

    Wrap tightly in plastic wrap (or cover in a bowl). Rest 30 minutes at room temperature. This relaxes gluten so you can roll it very thin without springing back.

    Roll it thin for crisp chiacchiere

    Divide dough into 3–4 pieces (keep unused pieces covered). Roll one piece with a rolling pin, then (best) pass through a pasta machine from thick to thin settings. Aim for very thin: you should almost see your hand through it. Thin dough = lighter, crispier, and more blistered.

    Cut classic ribbons

    Use a fluted pastry wheel (or knife). Cut rectangles about 3 x 12 cm (1 x 5 in), or long strips. Cut a small slit in the center if you like the traditional look. Keep cut pieces on a lightly floured towel so they don’t stick.

    Heat oil safely and precisely

    Pour oil into a heavy pot (deep enough for safe frying). Heat to 170–175°C / 340–350°F. If you don’t have a thermometer: dip a small scrap of dough—if it sizzles immediately and rises fast without darkening too quickly, you’re close.

    Fry fast, small batches

    Fry 2–4 pieces at a time (don’t crowd). They should puff and blister in seconds. Flip once with tongs or a slotted spoon. Total time is usually 30–60 seconds per batch. If they brown too fast, lower heat; if they soak oil and don’t puff, raise heat slightly.

    Drain and finish

    Drain on paper towels or a rack. Let cool completely (they crisp as they cool). Dust generously with powdered sugar right before serving for the best “snowy” look.
