Joint the rabbit cleanly into forelegs, hind legs, and saddle portions. Trim only obvious ragged fat or silverskin; do not over-trim, because the little surface fat present helps protect the meat on the grill.
Pat every piece very dry. This is not cosmetic: dry meat colors; damp meat steams.
