Prepare the station before touching the meat. Set out the veal chops, flour, beaten eggs, breadcrumbs, seasoning, clarified butter, tongs, tray, frying pan, wire rack, paper, probe or laser thermometer if available, and warm serving plates. Trim only excess external fat or loose membrane, but preserve the bone and the natural shape of the cutlet. Pat the meat completely dry. Moisture is the enemy of adhesion and of even browning. Arrange the breading line in exact order: flour first, egg second, breadcrumbs third, then a clean resting tray.
Lay each chop between two sheets of parchment and gently flatten only the thicker eye of the meat with a meat mallet or the base of a small saucepan. Do not crush the bone section and do not pound aggressively; the goal is even thickness, not a schnitzel-like sheet. Aim for approximately 1.5 cm / 0.6 in at the thickest point. Season both sides lightly with fine salt and white pepper. Let the chops stand for 5 minutes so the seasoning begins to penetrate. Critical point: over-thinning will dry the veal before the crust reaches perfect color.
Dust each chop lightly but completely with flour; shake off every excess. Dip into beaten egg, coating all surfaces, especially around the edges. Lift and let the excess drip naturally for a second or two. Transfer to breadcrumbs and press gently, not heavily, so the crumbs adhere without compacting into a thick armor. Repeat only where needed; do not double-bread. Place the breaded chops on a tray and rest them for 8 to 10 minutes. This resting phase is essential because it stabilizes the crust and reduces separation during frying. Critical point: never rush directly from breading to pan unless you want patchy coating.
Melt the butter slowly over low heat. Skim off foam and separate the clear golden fat from the milk solids, or use ready clarified butter. Heat the clarified butter in a wide pan until it reaches about 170–175°C / 338–347°F. A small drop of breadcrumb should sizzle immediately but not burn. Add a touch of neutral oil only if needed for thermal stability; the flavor must remain butter-forward. Critical point: if the fat is too cool, the crust absorbs grease; if too hot, the breading darkens before the veal cooks properly.
Place the chops in the pan away from you. Fry one side for about 3 to 4 minutes, gently spooning hot butter over the upper surface. Turn only once, carefully, using tongs and a spoon to support the crust. Fry the second side for another 3 minutes, adjusting heat continuously to maintain a steady golden coloration. The coating should become evenly amber, crisp, and lightly blistered. For a refined result, briefly fry the edges as well. Critical point: avoid overcrowding the pan; each cutlet must fry in stable, clean fat with room for circulation.
Transfer the cotoletta to a wire rack for 1 minute, never flat onto paper alone, or steam will soften the crust. Finish with a few crystals of flaky salt. Place on warm plates with the bone oriented elegantly. Add a precise lemon wedge and a small tuft of parsley or micro herbs. Serve immediately while the crust is audibly crisp and the interior remains juicy. In a haute cuisine presentation, accompany with a restrained salad of lightly dressed baby leaves or a small saffron potato fondant, but keep the cutlet visually dominant. Critical point: delay between pan and table is the final risk to texture.
