Begin by setting up your station with absolute precision. Wipe the mushrooms clean with a dry brush or lightly damp paper; do not soak them, or they will absorb water and steam rather than sauté. Separate 80 g / 2.8 oz of the best-looking mushrooms for the final garnish and dice them finely.
Heat the large sauté pan over medium-high heat. Add the olive oil and half of the butter. Once the butter foams, add the sliced mushrooms in a broad, even layer. Do not stir immediately; allow the first surface contact to caramelize. After 1 to 2 minutes, begin tossing. Add a small pinch of salt only after the mushrooms have started coloring. This helps them season without drawing out too much water too early.
Cook until the mushrooms release their moisture, the liquid evaporates, and the pan returns to a gentle frying sound rather than bubbling.
When the mushroom mixture is richly aromatic and lightly caramelized, pour in the white wine. Stir immediately, scraping the bottom of the pan to dissolve the concentrated cooking juices. Let the wine reduce until almost dry; this usually takes 1 to 2 minutes over medium heat. The smell should shift from sharp and alcoholic to rounded and fragrant.
Transfer the hot mushroom mixture to a blender, or use an immersion blender in a tall container. Blend until smooth and velvety. For an especially haute-cuisine finish, pass the purée through a fine sieve with the back of a ladle. This is optional, but it produces a more elegant mouthfeel and a more polished visual line when spread on the crostini.
Heat a small pan over medium heat with the remaining butter and a few drops of olive oil. Add the reserved diced mushrooms and sauté briefly until just tender and lightly colored. Season with a pinch of salt and a little thyme. Remove from the heat and fold in part of the chives.
Preheat the oven to 200°C / 390°F. Brush both sides of the bread slices lightly with olive oil and arrange them on a tray in a single layer. Toast for 6 to 8 minutes, turning once, until the slices are crisp at the edges and golden on the surface, but still slightly tender at the center.
Arrange the warm crostini on a serving platter or individual plates. Spoon or pipe a generous, even layer of mushroom cream onto each toast, leaving a narrow border visible so the bread frame remains elegant. Top each one with a small mound of the reserved sautéed mushroom garnish. Finish with a few chive cuts, tiny thyme tips, and, if desired, the lightest touch of lemon zest. Add a final restrained thread of olive oil.
Inspect each crostino from above and from the side. The cream should look smooth and luminous, the garnish should sit neatly without sliding, and the bread should remain clean at the edges. Taste one if possible: you are checking three things—seasoning, temperature, and textural contrast.
If the cream has tightened too much while standing, whisk in a spoonful of warm stock. If it has loosened, reduce it very gently for 30 to 60 seconds. Correct only at the last moment.
