Ditalini with Fresh Anchovies and Lemon

A haute-cuisine interpretation of a coastal Campanian pasta: small ditalini suspended in a silky lemon-anchovy emulsion, brightened by herbs and lifted by crisp pangrattato. This version is conceived with Amalfi Coast character in mind, drawing on the region’s celebrated lemons and Cetara’s long anchovy tradition.

Method

    Mise en place and station order

    Set out three working zones before turning on the heat: one for fish cleaning, one for aromatics and garnish, and one for cooking. Finely chop the parsley stems and leaves separately. Grate the lemon zest, then squeeze and strain the juice. Slice the garlic very thinly. Bring a large pot of water to the boil only after the prep is complete, because the anchovy phase moves quickly.

    Prepare the anchovies

    Rinse the anchovies briefly in very cold water, pat dry, remove the heads, open them along the belly, lift out the backbone, and separate the fillets. Reserve the neatest 8 fillets for plating; chop the remaining fillets into small pieces. Keep everything chilled.

    Build the crisp element first

    In a small sauté pan, warm 20 g / 0.7 oz olive oil over medium-low heat. Add the breadcrumbs and toast slowly until evenly golden. Season with a tiny pinch of salt and a little lemon zest off the heat. Transfer immediately to a tray or plate so they do not keep coloring.

    Start the aromatic base and cook the pasta

    Salt the boiling water and drop in the ditalini. While it cooks, warm the remaining oil in a wide pan over low heat. Add the sliced garlic and parsley stems; let them perfume the oil without browning. Add the chopped anchovies and stir gently until they dissolve into the fat. Add one small ladle of pasta water to create a light, savory base.

    Emulsify with lemon in the correct order

    When the ditalini is just under al dente, transfer it directly into the anchovy base with a little cooking water. Toss over low heat until the starch and oil bind into a fine emulsion. Add the lemon juice in two additions, tasting after each, then fold in half the parsley leaves and a little black pepper.

    Finish and plate with precision

    In the residual warmth of the pan, briefly warm the reserved anchovy fillets for a few seconds only, so they soften but do not cook hard. Spoon the pasta into warm shallow plates or bowls. Arrange the reserved fillets on top, finish with toasted breadcrumbs, the remaining parsley, a final touch of zest, and micro herbs if using. Serve immediately.
