Fettuccine with Tropea Onion and Tomato

A refined Calabrian pasta in which Tropea onion is treated as the principal note: slowly softened to a delicate fondue, brightened with tomato, and finished with a glossy emulsion so each ribbon arrives light, elegant, and deeply aromatic.

Method

    Mise en place

    Set a large pot of water over high heat. Peel the onion. Reserve about 20 g / 0.7 oz as neat inner petals for garnish; place them in iced water so they crisp slightly. Slice the remaining onion pole-to-pole into very fine, even strands, about 2 mm thick. Crush the tomatoes by hand in a bowl, keeping their juices. Lightly crush the garlic. Stack and slice the basil finely. Warm shallow bowls.

    Build the onion base

    Place a wide sauté pan over low heat and add the olive oil. Add the garlic for 30 seconds to perfume the oil, then add the sliced onion with a small pinch of salt. Stir היט until fully coated. Cover for 2 minutes to trap gentle steam, then uncover and cook for 12 to 15 minutes, stirring frequently, until the onion is collapsed, glossy, and translucent. It must not brown.

    Develop the tomato phase

    Remove the garlic. Add the crushed tomatoes, black pepper, and chilli if using. Raise the heat slightly to medium-low and simmer for 10 to 12 minutes, stirring from time to time, until the raw edge of the tomato disappears and the sauce becomes lightly concentrated but still fluid. Add half the basil off the heat.

    Cook the pasta

    When the sauce is nearly ready, salt the boiling water with the remaining salt and cook the fettuccine until 2 minutes shy of the packet time. Stir well in the first 30 seconds so the strands separate. Reserve 250 g / 8.8 oz pasta water, then drain quickly.

    Emulsify and finish

    Return the sauce to medium heat. Add the fettuccine and about 80 g / 2.8 oz reserved pasta water. Toss continuously for about 1 minute, adding more water in small additions until the sauce turns glossy and coats each ribbon in a thin, silky layer. Add the remaining basil and a final thread of raw olive oil.

    Plate with precision

    Lift and twist the fettuccine into compact nests using tongs and a ladle. Place in warm shallow bowls. Spoon a little extra sauce around the base, not over the top. Drain the reserved onion petals and arrange a few on each portion. Finish with basil tips and one last turn of black pepper. Serve immediately.
