    Mise en place (set the station like a pro)

    Set a pot for barley + a wide pan for tomatoes. Line a tray with parchment (for cooling barley fast).

    Prep now (critical for timing): halve 200 g / 7.1 oz tomatoes (raw), keep 100 g / 3.5 oz whole (for quick confit). Slice shallot paper-thin; chop herbs separately (so basil doesn’t bruise everything). Drain tuna and save the oil.

    Cook barley “al dente” and season while warm

    Bring 1200 g / 42.3 oz water/stock to a simmer; add 10 g / 0.35 oz salt. Add barley, simmer gently 18–25 min (taste at 18). You want a tender exterior with a firm center. Drain well. Spread on the tray immediately; drizzle 15 g / 0.5 oz olive oil and toss lightly.

    Quick tomato confit (sweet depth in minutes)

    In a wide pan on low heat, add 20 g / 0.7 oz olive oil and the 100 g / 3.5 oz whole tomatoes with a pinch of salt and pepper. Cover partially; cook 8–12 min, shaking gently, until skins loosen and juices concentrate. Turn off heat; let sit 2 minutes.

    Quick-pickle shallot + crisp the capers

    Toss shallot with 15 g / 0.5 oz vinegar, a pinch of salt, and 5 g / 0.18 oz water (optional). Rest 10 min.

    In a small pan, warm 10 g / 0.35 oz oil; add dried capers and fry 30–60 sec until they “bloom” and crisp. Drain on paper.

    Build the vinaigrette + herb green drizzle

    Whisk: lemon juice 25 g / 0.9 oz, reserved tuna oil 20 g / 0.7 oz, olive oil 20 g / 0.7 oz, black pepper, a pinch of salt.

    Reserve ¼ of the chopped herbs for garnish; stir the rest into the vinaigrette (this is your “green drizzle”). Add lemon zest at the end.

    Fold, don’t stir (protect the tuna)

    In a bowl: barley + raw halved tomatoes + drained tuna in large flakes + pickled shallot (drained). Add vinaigrette تدريجياً (little by little), tossing gently. Fold in quick confit tomatoes last. Rest 3 minutes, then taste: adjust lemon, salt, pepper.

    Plate like a tasting-menu course

    Use a ring mold (or small bowl) to form a neat mound. Spoon extra “green drizzle” around. Top with crisp capers, reserved herbs, and optional microgreens/pine nuts. Finish with a final thread of olive oil and a whisper of lemon zest.
