Frittata al Taleggio — Silk-Set Taleggio Frittata, Val Taleggio Style

A refined Italian egg preparation in which the custardy softness of the frittata becomes the stage for Taleggio’s creamy interior. The method is precise but not difficult: gentle heat, disciplined seasoning, and careful timing are what transform humble ingredients into something worthy of a restaurant pass.

    Mise en place: organize before heat touches the pan

    Preheat the oven to 160°C / 320°F. Cut the Taleggio into small irregular pieces so it melts in pockets rather than in one heavy mass. Slice the shallot very thinly, chop the chives, pick the thyme leaves, and crack the eggs into a bowl. Measure everything in advance and keep the cheese at cool room temperature for 10 minutes; cold cheese slows melting and encourages uneven setting. Select a 20 cm / 8 in ovenproof nonstick or well-seasoned pan.

    Build the aromatic base without color

    Set the pan over low heat. Add the butter and olive oil together; the oil protects the butter from coloring too quickly. Add the shallot and cook slowly for 4 to 5 minutes, stirring often, until translucent, soft, and sweet. It must not brown. A browned shallot pushes the dish toward bitterness and competes with Taleggio’s delicate milky depth. Remove the pan from the heat for 1 minute so residual heat drops slightly.

    Prepare the egg appareil

    Whisk the eggs with the cream, salt, black pepper, chives, and thyme until homogeneous. Whisk just enough to combine; do not beat hard. Excess air causes the frittata to puff in the oven and collapse into a coarse texture instead of remaining fine and custardy. Taste is impossible at this stage, so season with discipline: the cheese will add salinity and aroma later.

    Start the set on the stove

    Return the pan with the shallot to low heat. Pour in the egg mixture. With a heatproof spatula, stir slowly for 20 to 30 seconds, drawing the eggs from the edge toward the center to create tiny soft curds at the base. Then stop stirring and let the mixture settle into an even layer. Cook gently for 2 minutes, until the edge is lightly set but the top is still fluid.

    Add the Taleggio and finish gently in the oven

    Distribute the Taleggio pieces across the surface, pressing them in only slightly so some remain near the top and others sink halfway. Transfer the pan immediately to the oven and bake for 5 to 7 minutes, until the center is just set with a faint tremble when the pan is nudged. The cheese should be molten, not separated into oil.

    Rest, unmold, and plate with precision

    Rest the frittata for 2 minutes only. This short pause lets the structure stabilize without losing heat. If using salad leaves, dress them lightly with lemon juice and a few drops of olive oil. Slide the frittata onto a warm plate or cut directly in the pan into neat wedges. Finish with extra chives and a very light grind of pepper. Serve immediately while the Taleggio is still creamy.
